Hamburger Soup

This healthy hearty soup is a Smith family favorite. I originally got a hamburger soup recipe from my mom, used it and John loved it, but I lost it when we moved. I called her up to get a copy and realized I've changed it a bit to suit my family's tastes and to use items that I had on hand already. I made a pot for a family with a new baby in the house and they were delighted. Another great feature is that it freezes well so make a double batch and you'll have some to freeze for later.

1 lb hamburger

1 chopped onion, saute'd

2 cups grated carrots

1 cup grated zucchini (optional)

1 can cream of mushroom soup

2 cans canned tomatoes

1 cup water

1/4 teaspoon garlic powder

1/4 teaspoon pepper

2 teaspoons brown sugar

1 bay leaf

Start by browning your hamburger. Then add your chopped onion and cook until onion is tender. Add your grated vegetables and other ingredients. Simmer for 30 minutes. This could easily be thrown in a crock pot and simmered on medium or low for dinner.
