Steaks from Roasts Partial Freeze For Easy Cutting

I have a roast just purchased, I would like to do a quick partial freeze maybe 30 minutes to the point where I can slice it into steaks easier I then want to freeze the steaks. Is this safe. I would be be 5-10 minutes on a cutting board doing the slicing, probably more like 5 minutes. Thanks in advance

Lowering the temperature of the meat to firm it up for slicing is an old trick practiced by most butchers at one time or another. It won't hurt the meat and you can still freeze it without any problem. Just don't go around freezing and thawing multiple times, eventually you will kill the quality of the meat.
